Mint-lime syrup
Your mint is growing really well and getting big? Time to use it! This is a plant you can prune back hard without killing it and even enjoy it in your drinks!
This recipe is the perfect thirst quencher for hot summer days! A great syrup to add to sparkling water (or prosecco!) for a cool, refreshing drink.
Ingredients:
a small bunch of mint (peppermint is my favourite but you can try any mint)
2 limes
12.5 oz/375 ml water
2 cups / 500g sugar
1. Wash the mint gently and remove thick stems. Wash the limes in hot water. Peel the limes.
2. Add the water and the sugar into a pan and heat while stirring, until all the sugar is dissolved. Add the mint and lime peel, stir and let cool. Steep the mix in the fridge for about 48 hours.
3. Remove mint and lime peel.
4. Bring the syrup to a boil and let it cook for at least 3 minutes. Rinse some mason jars or small bottles with hot water to condition the glass. Fill the hot syrup in the jars and bottles, seal tightly and store cool.
5. Mix syrup with water or prosecco to taste.
