Herb Spotlight: Sage

We are adding a pretty well-known and popular herb this season: Sage!

Sage is a great culinary herb that has also medicinal values and is mostly used with poultry and fish dishes. The herb is used in many cuisines but probably mostly known being part of the French herb mix: Herbes de Provence and also as a major ingredient in the Italian dish Saltimbocca alla Romanasage flowers

One of our favourite ways of using sage leaves is to brown butter and fry the whole sage leaves until crispy as topping for pasta. This a great simple recipe that works well with e.g. cheese tortellini.

Sage is easy to dry just bundled, hanging upside down in a place that is dark but air-y. The leaves need to be absolutely dry and crushy to be stored over winter, otherwise mold might appear.

Steeping sage leaves in hot water and serving it as a tea is another excellent recipe. To sweeten add honey. A great winter tea!

Sage is a perennial and easy to grow. It prefers a sunny spot that is not wet and can tolerate somewhat poor soil.
